Current operations maintain a processing throughput of up to 10 metric tonnes per day alongside an annual harvest yield of 1,200 metric tonnes, with corporate management targeting an expansion trajectory toward 7,000 metric tonnes per year.

Director of Khyber Aquaculture, Yunus Trumboo, noted that corporate capital investments have centered on deploying industrial-scale farming and post-harvest infrastructure capable of delivering consistent, biosecure trout yields directly to commercial markets.

The planned portfolio spans fresh, chilled, and frozen inventory. Initial commercial rollouts feature skin-on pin-bone-out portion cuts, supreme fillets, and cut steaks, to be followed by ready-to-cook curry portions and dedicated cuts for sushi and sashimi applications. For institutional food service and hospitality (HoReCa), the enterprise will distribute specialized food-service formats, including a 3.2-kilogram master pack consisting of four select supreme fillets for professional culinary operations.

Under controlled temperature parameters, chilled product shelf life is projected at five to eight days, whereas deep-frozen lines maintain commercial stability for up to 12 months. The operation will also deploy Modified Atmosphere Packaging (MAP) technologies, utilizing adjusted gaseous blends within sealed containers to delay biochemical breakdown and optimize freshness retention.

To establish immediate consumer direct engagement, Khyber Aquaculture is preparing the launch of its initial proprietary retail boutique in Karan Nagar, Srinagar. The store layout accommodates live, fresh, chilled, and frozen lines, featuring an on-site custom dressing, filleting, and packaging counter.

Securing FSSAI market clearance permits the enterprise to expand logistical distribution networks beyond Jammu and Kashmir into the Delhi-NCR metropolitan belt and broader North India wholesale, supermarket, HoReCa, and e-commerce segments.
